If you like hawaian pizza you should love this pineapple glazed ham balls. The taste is a bit similar with a sweet and sour flavor.
Ingredients:
1 pound ham diced
¼ pound bacon diced
1 cup breadcrumbs
2 eggs
2 teaspoons mustard
2 tablespoons brown sugar
2 tablespoons pineapple juice
For the glaze:
1/2 cup sherry vinegar
1 cup pineapple juice
1 tablespoon ketchup
½ cup brown sugar
1 teaspoon corn starch
Preparation
Preheat the oven to 350 F
In a food processor, place the ham and bacon and pulse to chop fine.
Place the mixture in a bowl and add the breadcrumbs, eggs, mustard, brown sugar and pineapple juice. Mix until well combined. Then by hands form some meatballs around 2 inch diameter.
Place the meatballs in a baking dish =. Place in the oven and bake for about 1 hour.
Meanwhile you can prepare the glaze. In a small bowl mix the corn starch with 2 tablespoons water.
In a small saucepan place the pineapple juice, sherry vinegar, ketchup and brown sugar. Bring to a boil. Whisk in the corn starch mixture and simmer for about 2 minutes.
After the meatballs have cooked for 20 minutes, baste the meatballs with the glaze. Then repeat after 40 minutes of cooking
