Another mediterranean dish ...
8 ounces orzo pasta
1 pint yellow cherry tomatoes
1 pint cherry tomatoes
1 cucumber peeled and chopped
8 ounces feta cheese
¼ cup extra virgin olive oil
2 tablespoons fresh oregano minced
2 green onions sliced
Juice of 1 lemon
In a large pot, bring some salted water to a boil. Add the orzo pasta.
Cook uncovered according to package instructions until al dente.
Drain the pasta and rinse under cold water
Place the pasta in a large bowl and toss with the olive oil. Add the cucumber, green onions, cherry tomatoes, and the oregano. Crumble the feta cheese and add the lemon juice.
Toss well and serve.
