Veal Meatballs Stuffed with Cheddar and Cranberry Sauce

Most of the meatballs recipes are beef meatballs. What makes the difference with this one is that it's a veal meatball recipe. And what makes it really original: the cranberry sauce !

Meatballs:
1 lb ground veal
1 egg beatenmakes
1 slice whole wheat bread crumbled
2 tsp. fresh rosemary
5 oz. Cheddar block cubed 1/4 inch
Sauce:
1/2 cup cranberry juice
1/2 cup cranberries (fresh or frozen)
3 tbsp  maple syrup
Salt and pepper, to taste

Preparation

Preheat oven to 450 ° F.
In a small saucepan, bring cranberry juice, fresh cranberries and maple syrup to a boil. Cook 8 to 10 minutes
Mash the mixture in order to make a puree until smooth and season with salt and pepper. Set aside, trying to keep it warm or at least at room temperature.
In a bowl combine the ground veal, egg, bread crumbs and rosemary. Add the seasoning
Shape into small meatballs by coating the cheese cubes with the preparation of meat. The cheese should be completely covered.
On a baking sheet lined with parchment paper place the meatballs and put in the oven.
Bake for 8 to 10 minutes until meatballs are golden.
Serve hot with the sauce on the side
