Stuffed Clams

This stuffed clams recipes is a traditional mediterranean recipe.
With this recipe you can see it's easy to make a very nice dish only with basic ingredients.
Of course more fresh are the clams better it is!

Ingredients:

10 large clams cleaned
3 Tbsp. shallot minced
100 g mushrooms minced
2 Tbsp fresh parsley chopped
1 glass of white wine
2 cloves of garlic minced
Olive oil
2 Tbsp lime juice
1 cup bread crumbs
1/4 cup parmesan cheese grated

Preparation

Preheat oven to 350°F
Pour some white wine in a pan over high heat. Place the clams in the pan and cook until the shells are opened.
Remove the clams from the pan and let cool enough to handle (discard the clams which didn’t open). Set the wine mixture aside because you will use it again later
Drain and take out the meat from the shells. Break apart the clam shells from their hinges and keep a dozen of the best looking ones. Minced the clam meat
In another pan over medium heat sauté the shallots and the mushrooms in the olive oil for 3 minutes. Then add the garlic and cook for 1 more minute
Finally add the minced clams, lime juice, parsley, bread crumbs and 2 Tbsp. of the previous wine mixture and stir for 2 minutes.
Place the clam shells on a baking dish. Scoop some of the stuffing mixture into the shells and sprinkle with parmesan cheese
Bake for 20 to 25 minutes
